Petite Marmite Soup







Ingredients -
  
2 cups lean beef, cut into cubes 
1 cup chicken breast, cut into cubes 
1 liter beef stock 
1/2 cup leeks, white parts, cut into cubes 
1/2 cup white onion, cut into cubes 
1/2 cup white cabbage, cut into cubes 
1/2 cup carrots, cut into cubes 
1/2 cup turnips, cut into cubes 
1/2 cup celery stalk, cut into cubes 
1/2 cup zucchini, cut into cubes 
1/2 cup rutabaga, cut into cubes 
1/2 cup cilantro, coarsely cut 
salt and pepper to taste

Procedure -


In a heavy covered pot, simmer the beef and chicken in the beef stock until tender. Remove the meat and cut into cubes. Set aside. In a soup pot, saute' onion until soft. Add celery. Cook until done. Add the leeks. Add cubed carrots, cubed turnips and cubed rutabaga. When half done,add cubed zucchini. Add the beef stock. Boil and add beef and chicken cubes. Simmer to a boil. When almost done, add cubed cabbage. Adjust seasoning. Add coarsely chopped cilantro. Serve hot.
