Crab, Scallop And Shrimp Salad, Duo Of Caviar, Papaya Coulis







Ingredients -

1 cup papaya, peeled, seeded and cut into small cubes 
1/2 cup snow crab leg meat 
1/2 cup shrimp, shelled, cooked and deviened and cut into small cubes 
1/2 cup scallop, cleaned and foot removed 
1tsp mustard 
1 tbsp dill, chopped 
1 tsp capers, chopped 
3 tbsp lemon juice, freshly squeeze 
1 cup mayonnaise 
2 tbsp sour cream 
1 small can golden fish caviar 
1 small can salmon caviar 
1/2 cup orange segments, 2 segments per plate 
1 cup papaya coulis

Procedure -

Remove any shell from the shrimp and cut into 1/2 cm pieces. Clean the scallop and gently poach in some fish stock. Remove and allow to cool. Cover when cooling. Cut the scallop into the same size as the shrimp and papaya. 
In a large bowl mix the diced papaya, shrimps, crab and scallops with the dill, capers, mustard, lemon juice, lemon zest and mayonnaise. Lightly bind together and taste for seasoning. 
For plating. Arrange the ring at the back of the plate. Put mixture to mold and remove the ring. Place two pieces of the orange segments on top of the mixture and spoon on the salmon caviar. Garnish the plate with three spots of papaya coulis and one spot of the sour cream. Picked dill leaves and a small quenelle of golden caviar.
