Milwaukee's Famous Fish Fry
Ingredients -
Batter -
1 kg All‐Purpose Flour
5 each Eggs
1 bottle Light Beer
1 liter Oil for frying
1 kg All‐Purpose Flour (add crab boil) for dredging
6 pieces Perch Fillets 50 x 170g
Crab Boil Seasoning Mix -
1/2 tsp Mustard Seeds
1/2 tsp Coriander Seeds
1/2 tsp Dill Seeds
1 tsp Allspice, whole
2 pieces Whole Cloves
1/2 tsp Crushed Red Pepper Flakes
2 pieces Bay Leaves
Potato pancake -
1 kg Potatoes (5 kg yield) peeled, shredded
1/2 cup Onions peeled and shredded
5 each Egg Yolks lightly beaten
1/2 cup Parsley chopped
1/2 cup Chives chopped
1/2 cup Vegetable oil
Procedure -
Combine flour, eggs, salt and pepper and beer and beat until a smooth batter is formed. Season the Dredging flour with the crab boil seasoning mix. Shake off excess flour and then dip into the batter. Deep fry at 350F (176C) until golden brown. Remove from oil and drain well.
Crab Boil Seasoning Mix:
Add all ingredients into a food processor with a metal blade. Pulse until the mixture forms a coarse powder.
Potato Pancake:
Mix the potatoes and onions together. Drain any water. Mix in the eggs, parsley and chives. Season and cook a test piece. Adjust accordingly. Form into thin cakes and pan fry in the vegetable oil until golden brown and crisp on the outside.
