Cream Of Artichoke Soup







Ingredients -
  
2 tbsp butter 
1 medium size white onion, chopped 
1 stalk celery, chopped 
1/2 cup leeks, chopped 
1 1/2 liters chicken stock 
1/2 cup cream 
1/2 kilo potatoes, peeled and diced 
2 tbsp chives, chopped 
3 tbsp lemon juice 
2 tbsp sugar
2 kilograms artichoke, peeled and diced

Procedure -

Saute chopped onion, chopped celery and chopped leeks in butter. Add artichokes and chicken stock. Cook to tender. Puree the mixture until smooth and season. Bring the lemon and sugar to the boil. Once the sugar is dissolved, whisk the lemon and sugar mixture to taste into the soup. Bring soup to a boil and add in cream. Ladle soup into heated bowls and garnish with the chopped chives .
