Oven Cooked Sweet And Sour Red Cabbage







Ingredients - 
2 kilogram red cabbage 
1 liter malt vinegar 
400 grams brown sugar 
500 grams butter, diced 
18 grams salt 
8 pieces star anise 
9 grams coriander seed 
40 each juniper berries 
20 each green apples 
ground pepper to taste

Procedure -

Preheat the oven at 140C. Quarter the cabbage and slice thinly on a slicing machine. Wash and grate the apple to the core. Place the cabbage in a large heavy pot with the apples. Add in the vinegar, sugar, butter and salt. Take a square of muslin cloth or cheese cloth and wrap the coriander seeds, juniper berries and the star anise in the cloth loosely. Place in the middle of the cabbage. Cover the pan and wrap with tin foil. Place in the oven for at least 15 minutes. Halfway during cooking, remove the tin foil and give the cabbage a good stir. Place back in the oven with the tin foil cover and finish cooking. About 5 minutes more. When finish, strain the cabbage and any juices should be reduced and added back to the cabbage. Reduce to a syrupy texture.
