Sirloin Beef Burger "Oscar " Topped With Blue Crab, Asparagus And Hollandaise Sauce






Ingredients - 
4 pieces beef patties 
vegetable oil, for frying 
steak fries 
4 pieces hamburger buns 
2 pieces tomatoes, thinly sliced 
2 pieces red onion, thinly sliced 
1 piece iceberg lettuce, leaves separated 
1 cup crabmeat 
1 cup surimi 
2 tbsp butter 
1/4 cup white wine 
2 tbsp shallot, chopped 
12 pieces asparagus, blanched 
2 cups hollandaise sauce 
salt and pepper
Procedure - 
Cook burger to your doneness. Season with salt and pepper. Do not press down the meat as it cooks. Follow the process and allow the burger to cook properly. Caramelize buns on flat griddle surface, do not cook more than brown color or will appear burned. Cut lettuce leaves to fit bun. Top bottom half of bun with lettuce, 2-3 thin tomato slices and shaved red onion. Crab meat and surimi mix - Saute shallots in butter until clear. Deglaze with white wine. Reduce until dry.Allow to cool. Add crab meat and surimi. Season to taste. 
On top of bun, place 3 asparagus spears, trimmed so tips are slightly sticking out from bun. Top with cooked burger, 1 oz of crabmeat, and 1 oz of hollandaise sauce.Deep fry Steak fries and remove from oil, season with salt. Garnish plate with Fries.
