Ginger‐Lime Beurre Blanc







Ingredients -

1/2 cup Shallots minced 
1/2 tsp Peppercorns 
1/2 cup Ginger grated
1/2 cup Dry white wine 
4 tbsp Lime juice 
4 tbsp White wine vinegar 
1 liter Heavy cream 
1 cup Unsalted butter cut into chunks 
1/2 tsp Salt
1/2 tsp White pepper

Procedure -

Combine the shallots, peppercorns, ginger, wine, lemon juice, and vinegar in a saucepan. Reduce over medium‐high. Add the heavy cream, and reduce by half.
Strain and taste the beurre blanc and adjust with salt and pepper.
